Strawberry Short Cake
Its a simple recipe:
Roll out pie crust dough. Cut in long 1 in wide strips. Bake in oven for 10 minutes. Cool
Then lawyer the following:
Pie dough crust strips
spoon full of strawberries
whip cream
and repeat

On the back of the bathroom door at the Amusement park in Guatemala, it says "Deposit the toilet paper in the toilet"
....as compared to the trash can where we normally throw the paper.

Omelet in a Bag
The best thing about it is that all of the individual omelets are ready at the exact same time. How cool is that? This is a great family project meal. This week, I had Gail and Caroline (along with Glenn) join me. One omelet slipped out of the bag so be careful!
Ingredients: eggs, and items such as (cheese, tomatoes, bacon, ham, mushrooms, peppers, onions, black olives, salt & pepper. (anything you might like in an egg omelet).
Directions:
Each guest will have a bowl with 2 eggs. Beat eggs. Pour eggs into individual Ziploc bag. Add a small spoon of water and a tiny bit of melted butter, then add any of the above ingredients. Seal bag and be sure that it does not leak. Shake briefly.

Drop in boiling water for 13 minutes. Roll onto Omelet plate and enjoy.

Guatemala DOES NOT go on Daylight Savings Time! So, on Sunday, when everybody in the US "springs forward", we remain the same. Guatemala will then be on the same time zone as Denver, Colorado.

Taco Soup
2 lb ground beef
1 chopped onion
1 1/2 cut water
1 pkg of taco seasoning
1 pkg of dry ranch salad dressing
3 cans of diced tomatoes
1 can kidney beans
1 can of pinto beans
1 can or corn
1 can of green chilies
Cook and serve with cornbread. Spread some grated cheese on top.

Car Stolen
Last Friday, one of our co-workers had parked their 1994 Isuzu Rodeo on the cobbled stone street in Antigua. They arrived early for conference, so spent a few hours shopping and eating lunch. When they returned their vehicle was G-O-N-E!
Imagine your weekend clothes, jewelry, favorite Bible and miscellaneous stuff in the car, stolen also. Since the vehicle is over 10 years old, it must have been stolen for the parts that could be sold individually. How sad.
If you think about it, remember our friends, Niel & Diana as they process this loss and replace their vehicle.

The Keeper of the Spring
Volunteer teams from churches in PA, TX, AZ and OK helped with childcare, youth program, and music. There were "break out sessions" with topics ranging from Maya traditions, Computer Technology and Communication with your support base, Culture Shock and Guatemala safety briefings presented by US embassy workers.
